INGREDIENTS FOR THE FISH

Prawns-Medium250 gm
Vegetable Oil1-2 tbsp
Small Onion1 finely decide
Ginger grated1 tbsp
Garlic2 minced
Thai red curry paste2 tbsp
Coconut Milk1 Cup
Chicken Broth1 Cup
Red Capsicum1 thinly sliced
Fish Sauce2 tbsp
Soya Sauce2 tbsp
Sugar2 ½ tbsp
Chilli garlic Sauce1 tbsp
Lime1
Fresh Basil or Corriander LeavesTo garnish
Spring Onion1 thinly sliced
Rice Noodles100 gm

HOW TO PREPARE

  • Place noodles in a bowl and boil enough to just it is done
  • Defrost the prawns as per instructions and wash.
  • In a pot heat oil,add onions & ginger
  • Saute until fragrant and golden about 3 mins.
  • Add garlic & red curry paste fry it for 1-2 mins.
  • Add coconut milk,chicken broth and bring to a simmer
  • Then add red capsicum, soya sauce,fish sauce,sugar and chilly garlic sauce
  • Add the prawns & simmer until cooked
  • Give a generous squeeze of lime
  • Drain noodles and toss it right into the pot and serve
  • Garnish with fresh basil,coriander leaves & chopped spring onions.
