INGREDIENTS FOR THE FISH

Prawns-Medium250 gm
Oil2 tbsp
Small Onion1 finely sliced
Red Capsicum1 seeded and cut into thin strips
Ginger2 tsp minced
Garlic2
Thai green curry paste3 tbsp
Coconut Milk1 Cup
Chicken Stock1 Cup
Fish Sauce2 tbsp
Beans10-12 (blanched & cut into 2 inch pieces)
Thai Basil leavesas needed
Lime1 cut into wedges
Salt & PepperTo taste

HOW TO PREPARE

  • Defrost the prawns as per instructions and wash.
  • Heat oil in a Wok over medium heat
  • Add Onion and Red Capsicum.
  • Saute till the onions are translucent
  • Add ginger and garlic and cook for 30-45 sec.
  • Add curry paste and prawns,stir for another 30-45 sec.
  • Add a few tbsp of coconut milk and stir well
  • Add remaining coconut milk,chicken stock,fish sauce and blanched beans & allow the mixture to bubble for 3 mins.
  • Add salt & pepper to taste and serve hot

TIP: 

Good with Rice or Rice noodles
